Makes Me Think

Marian Keegan was just 22 and a recent graduate from Yale University. She was my age exactly. She was in my same boat, having just recently graduated and without a job. She loved writing. She felt the same way about leaving college. She talked about her future and how she had her best years ahead of her. She talked about possibility, just as I did days ago. She talked about her "What ifs" and making life grand. She wrote this amazing piece for her commencement last week. You can read it here. Marian passed away in a car accident on Saturday. She was so young and full of energy. Makes me think. Don't procrastinate life. You're never guaranteed tomorrow, even with amazing aspirations.

Carmelitas

What does a post-graduate do with herself after absolutely every single person has high-tailed it out of Chapel Hill for the holiday weekend?

She bakes. Carmelitas. Isn't that really fun to say?

I got this picture and this recipe off Lulu the Baker.

These cookie-bars are delicious. Try them as soon as possible.

What you'll need:
      32 caramel squares, unwrapped
      1/2 cup heavy cream
      3/4 cup butter, melted
      3/4 cup brown sugar, packed
      1 cup flour
      1 cup rolled oats
      1 teaspoon baking soda
      6 ounces semisweet chocolate chips
      Patience during the cooling process











What to do:

1. On low heat, melt the caramel squares and heavy cream in a pot on the stove. If you're like me, you'll be very lucky to get 32 caramel squares out of the bag because they are way too delicious.

2. In a separate bowl, combine butter, brown sugar, flour, oats, and baking soda. It will be a dough-like consistency.

3. In an 8x8 pan, but half of the oat mixture on the bottom, forming a crust. Place in the oven (350 degrees) for 10 minutes. I baked mine in two separate bread pans so that I can half for me/my roommates, half for a friend.


 4. Remove crust from oven and sprinkle chocolate chips over the crust. Then pour melted caramel over the chocolate chips. Crumble the rest of the oatmeal mixture over the caramel. Bake for 15-20 minutes, or until oatmeal is golden brown.


 5. THEN, the hard part. The waiting game. You have to wait until the caramel sets, which is usually about an hour. BUT, if you're impatient like me, you can stick those suckers in the freezer for about 20 minutes and voila!

6. Enjoy!



I am also enjoying summer freshness. Loving some fresh tomatoes, fresh basil, and fresh mozzarella thrown together to make a caprese salad. Drizzle balsamic vinegar over it and sprinkle a dash of salt and summer never tasted so good.



Headed off on a journey to the mountains for a few days. Be back later in the week. Eat some carmelitas while I'm gone.
