One of my friends, Abby, made my parents an anniversary cake that was spectacular. The two of them are headed to Alaska to go on a cruise for a couple of weeks. Abby certainly captured the Alaskan culture.

Father's Day was also this weekend, so we celebrated with some presents. Collin loves surprises so he believes that all presents are for him. Happy Belated Father's Day to all the dad's out there!
Lastly, it was mama's "birthday". We celebrated this weekend because she'll be cruisin' on her birthday in a couple weeks. Happy Birthday, Mama T.

Collin and I got some quality Nephew-Aunt time. We eat ice cream when we're together. We swim. We, of course, discuss dinosaurs. And I sang this song to him because "Bubble Guppies"came on one time while he was here and I can't get the theme song out of my head!

I made these cookies this weekend for Father's Day. A couple summers back we traveled to Catalina Island off the coast of California and took a tour. It was beautiful scenery, but the tour was sub-par. The tour guide dropped us off at the "airport" at the end of the tour and they sold these cookies inside. My dad hasn't stopped talking about them since we went. Talk about delicious. Check out this recipe.
Catalina Island Airport "Killer Cookie" Recipe
1 cup butter, melted and cooled
1 cup sugar
1 cup brown sugar
2 large eggs , beaten
1 cup rolled oats (oatmeal)
1 cup crushed corn flakes
2 cups flour
1 teaspoon baking powder
1 teaspoonbaking soda
1/4 teaspoon salt
2 teaspoons vanilla
3/4 cupshredded coconut
1 cup rasins
1 cup choclate chips
3/4 cup toffee pieces
3/4 cup chopped walnuts
Preheat oven to 375°F.
In a large mixing bowl, combine oats, corn flakes, sugars, raisins and coconut.
Add eggs, vanilla and melted butter.
Mix till well blended.
Mix in chocolate chips.
In a separate bowl, mix flour salt, baking powder and baking soda.
Add flour mixture and stir until it is all incorporated into the dough.
Drop rounded tablespoons of dough onto a greased cookie sheet (At the airport they make these cookies 4-5 inches in diameter, and thats how I like them too) and bake for 12-15 minutes They should be a little undercooked, but not too much, just enough to "set" while they cool off. Cool on a wire rack.
